WELCOME to Red Velvet for the Soul! I hope that red velvet lifts your spirits, makes you laugh and just makes you feel good. Unfortunately, this blog isn’t solely going to be about red velvet cake, which my mouth waters just thinking about it and looking at the photos above I can actually taste the cream cheese frosting and the perfectly chocolately cupcakes ……(drooling and scrolling through my contacts to look for my “cake pushers” phone number). Oh…hey, sorry about that I got a little distracted and yes I do have the number of a couple of my favorite cake pushers saved in my cell phone. I’ve had a few red velvets in my day and being that my grandmother kept a dining room table full of deserts at all times I consider myself a connoisseur of cakes and can spot a good “looking” red velvet immediately. Taste is something completely different. First of all, the cake must be kept at room temperature. Any sort of slightly chilled cake with icing is an automatic fail. Secondly, the smell of cream cheese and chocolate should waif, like the pie in the window sill of cartoons, to your nose with ease. Lastly, it must be red! Not burgundy, not brown, but RED. I won’t even eat it if it’s not the right color and you shouldn’t either. If the color is wrong, more than likely the taste is wrong. Tasting is pretty simple; it should be moist, have a slight chocolate taste, and the frosting should be a perfect blend of cream cheese and sugary goodness. That’s it.
If you don’t feel like you need a glass of milk and shot of insulin after having a piece of cake, it is an automatic fail.
